The sandwich is served on thick, earthy rosemary focaccia with creamy mashed chickpeas, arugula, greek yogurt that has been infused with spicy harissa and tangy feta cheese. It is hearty and satisfying. Enjoy it at lunchtime for $13.

This upscale restaurant offers a great eggplant sandwich during their lunch service. The eggplant is perfectly seasoned and served on bread with rich basil pesto and plenty of stracchino cheese, which is a delicious Italian cow’s milk cheese. The sandwich is priced at $13. Remember to make a reservation, or you can sit at the bar if you are in a rush.

For a cheese-focused veggie sandwich, stop by GCDC. Their french onion sandwich is real treat, with loads of melted gruyere cheese and sweet caramelized onions. It comes on challah bread, making it all the more decadent. Be sure to get the sandwich with a side of crispy tater tots. The sandwich by itself is sold for $8.50. If the french onion sandwich doesn’t appeal to you, the restaurant does have other veggie options including a mediterranean sandwich made with veggies and feta cheese. They can also turn your sandwich into a quesadilla if you prefer.

Mike Isabella is one of DC’s most popular chefs, and his sandwich shop produces one of the most talked about sandwiches around: the roasted cauliflower sandwich. The hearty cauliflower is delicious all on its own, but the addition of pickled veggies and romesco sauce take it to a new level. He also offers other vegetarian sandwiches, and sides like house made potato chips, beans, falafel and lemon potato hash. Try it for $9. Keep in mind the sandwich shop is only open for lunch.

For a sandwich that tastes like it has meat in it but doesn’t, try Evolve’s oven-fried chick-un sandwich. Battered fake chicken is served on a fresh roll with lettuce, tomato and creamy vegan mayonnaise. It is uber satisfying, and will make meat-eaters wonder why they ever bother with real chicken! Enjoy it with a side of vegan mac ‘n’ cheese or garlic kale salad for just $8. If you decide to get two sides, the price goes up to $10.
