Ask some health food enthusiasts and they’ll tell you when Ponce de León discovered the Fountain of Youth he actually stumbled upon a garden of kale.
Health nuts more grounded in reality will tell you kale makes the whole “apple a day keeps the doctor away” philosophy seem like small potatoes.
So what is so magical about this leafy green vegetable?
Here are five fast facts to help you get to know it a little better.
1.) Vitamin C Powerhouse
One cup of chopped kale has as much vitamin C as an orange. The same serving will also cover 100 percent of the daily requirements for vitamins A and K.
2.) It’s Not Just Green
If you have an aversion to all things green on your plate, don’t worry. Kale also comes in white, purple, and red varieties.
3.) Kids Love Kale Chips
Kale chips have about half (maybe less) the calories of potato chips and are easy enough to make that even the most novice chef can perfectly create them in the kitchen. And the kids love them! Drizzle on a little olive oil and their favorite seasoning and they’ll flip.
4.) Disease Fighter
Kale is chock-full of antioxidants, making it the perfect cleanser of free radicals in the blood. That’s key because some studies have shown free radical damage can lead to cancer and other chronic conditions.
5.) Calcium Clout
A cup of chopped kale has about a third of the amount of calcium as traditional powerhouse milk. A salad made with kale will often yield as much calcium as a glass of moo juice.
